These are not your standard Saturday morning pancakes. The whipped ricotta makes them impossibly light, and the lemon keeps them from feeling heavy or rich. You will not go back to boxed mix after this.

- 4 eggs, separated

Step 1: Prep the Batter
Separate your eggs. Beat the yolks with the ricotta, lemon zest, and lemon juice until smooth. In a separate bowl, mix flour, salt, and baking powder, then fold into the ricotta mixture. Do not overmix.
Step 2: Whip the Whites
This is the key step. Whip your egg whites to stiff peaks using a hand mixer or stand mixer. Fold them gently into the batter in three additions. The goal is to keep as much air as possible. A few streaks are fine.
Step 3: Cook Low and Slow
Melt butter in a non-stick skillet over medium-low heat. Drop about 1/4 cup of batter per pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook another 1-2 minutes. The low heat ensures the inside cooks without burning the outside.

- Do not skip the separated eggs. Using whole eggs makes the pancakes dense.
