Crispy Chickpea Feta Bowl

This bowl hit my For You page three times last week and I finally get why. Crispy chickpeas, creamy feta, a garlic tahini drizzle, and fresh herbs. Thirty minutes, one pan, and it actually fills you up. The contrast between the crunchy chickpeas and the soft feta is the whole point.

The key is drying the chickpeas really well before roasting. Any moisture and they steam instead of crisp.

Ingredients

  • 1 can chickpeas, drained and thoroughly dried
  • 200g block feta cheese
  • 2 tbsp olive oil, divided
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Tahini (good quality, for the dressing)
  • 1 lemon, zested and juiced
  • 1 small garlic clove, minced
  • Handful of fresh dill and mint
  • Pita or crusty bread, to serve

Step-by-Step Instructions

Step 1: Dry Your Chickpeas

Drain and rinse a can of chickpeas. Lay them on a clean kitchen towel and roll them around until they’re completely dry. This step is not optional. Moisture is the enemy of crunch.

Step 2: Season and Roast

Preheat your oven to 400°F. Toss the dried chickpeas with 1 tablespoon of olive oil, the smoked paprika, cumin, a big pinch of salt, and some black pepper. Spread them out on a baking sheet in a single layer. Don’t crowd them or they’ll steam instead of roast.

Roast for 20 to 25 minutes, giving the pan a shake halfway through. They’re ready when they’re golden brown and have some actual crunch to them.

Step 3: Make the Tahini Dressing

While the chickpeas roast, mix 2 tablespoons of tahini with the juice of half a lemon, the minced garlic, and a splash of water. Stir until it’s smooth and drizzable. It should pour easily off a spoon. Add more water if it’s too thick.

Step 4: Assemble the Bowl

Place the feta block on a small plate or shallow bowl. Drizzle with the remaining tablespoon of olive oil and pile on the lemon zest. Top with the hot crispy chickpeas straight from the oven.

Drizzle the tahini dressing generously over everything. Scatter fresh dill and mint on top. Eat immediately while the chickpeas are still hot and crunchy.
